Objectives
- Innovation in VET: Expand knowledge of ancient grains in terms of utilization, processing techniques, biodiversity, cultural heritage, marketing, and nutrition, targeting VET students and professionals in the culinary sector.
- Inclusion: Use culinary traditions as a means of cultural inclusion for migrants, asylum seekers, and second-generation youth by increasing their employability and social participation.
- Environment: Promote “retro-innovation” by valorising ancient grains as climate-resilient, biodiversity-preserving, and sustainable food sources, aligned with the EU Farm to Fork Strategy.

- Comprehensive Guidebook on Ancient Grains
- Consolidating theoretical and practical knowledge from Italy, France, Türkiye, and African traditions.
- Disseminated across VET institutes, associations, and public entities.
- Educational Materials & Training
- Four sets of country-specific materials on ancient grains, covering cultural, nutritional, and environmental aspects.
- Integration into VET curricula (cooking, bakery, pastry, pasta-making, etc.).
- Practical Learning & Exchange
- Transnational Project Meeting in Italy for mutual exchange of techniques and recipes.
- Cooking Classes in Italy, France, and Türkiye to disseminate project outcomes to students, professionals, and migrants.
- Dissemination & Multiplier Events
- Multiplier events in each partner country.
- Promotion via Erasmus+ platforms (EPALE) and incorporation into future training curricula.
